Diwali is all about nostalgia and classic mithais! This Diwali, chefs Pooja Dhingra and Natasha Gandhi came together to create something hearty and sweet, that too with two of the most nostalgic sweet treats, rasmalai and Milk Bikis!

"If you love rasmalai and Milk Bikis as much as we do then this eggless dessert is perfect for Diwali!," Dhingra said. The chefs made a soft cake and used a rasmalai soak with it and combined it with the popular Milk Bikis biscuit which is loved for its mildly sweet, creamy flavour and crunchy texture.

Rasmalai cake is typically soaked with ras (saffron-flavoured milk syrup) to add moisture and infuse the rasmalai taste. The cake layers are then spread with whipped cream or lightly sweetened cream infused with cardamom or rose essence. Between layers, crumbled pieces of rasmalai can be added for extra flavour. 

The chef-special rasmalai cake is unique as it uses a batter infused with cardamom powder and saffron-infused milk and has crushed Milk Bikis. Once the cake is baked, the chefs poke some fine holes on it and pour the rasmalai soak over it so the cake can soak in. The cake is then topped with a whipped cream layer and some good ol' Milk Bikis!
