Mangolicious Pizza 


Ingredients 

  • 1 large pizza base             
  • 100 g of pizza sauce
  • 80 g pizza cheese, grated        
  • 10 ml of balsamic vinegar
  • 150 g mango chunks
  • 50 g rocket leave
  • 10 ml of olive oil
  • 2 g of salt
  • 1 g of crushed black pepper

Method 

  • Take a pizza base and spread pizza sauce on it with a spoon. Sprinkle cheese on it, and then bake it in the oven for 5 minutes until the cheese becomes golden brown.
  • Meanwhile, in a mixing bowl, mix salt, pepper, olive oil, and balsamic vinegar. Add rocket leaves as well.
  • Take the pizza out. Cut the slices into eight pieces. Keep a few mango chunks on each slice of pizza, then keep the rocket salad in the centre of the pizza. Serve hot.

Mango Chicken Salsa Verde

Ingredients 

  • 200 g of chicken breast
  • 100 g of mango diced
  • 5 g salt
  • 2 g of crushed black pepper
  • 30 g of chopped garlic
  • 20 ml of olive oil
  • 5 g thyme, chopped
  • 100 g of grilled vegetables
  • 100 g mashed potato
  • 300 g of cooking cream
  • 30 g of butter
  • 20 g parsley, chopped

Method 

  • Marinate chicken breasts with salt, pepper, thyme, salt, and garlic. Keep it aside for some time.
  • Heat the frying pan. Add olive oil and chicken breast. Grill them for a minute each. The pan should be covered.
  • In another saucepan, heat oil. Add garlic and sauté for some time. Add butter, cream, salt, pepper, and parsley. At last, add diced mango.
  • Take a plate, keep preheated grilled vegetables on one side, and keep mashed potatoes in the centre. Keep the grilled chicken breast on mashed potatoes and pour the hot sauce on the breast. Garnish with chop parley. Serve hot.
