Ingredients:
- Coriander seeds - 125 grams
- Dry red chilli - 125 grams
- Toor dal - 100 grams
- Channa dal - 50 grams
- Pepper - 25 grams
- Methi - 12 grams
- Raw Haldi - 25 grams
Instructions:
- Take a bowl, add in all the ingredients, and mix them well.
- Then sun dry them for a day, or you could also pan-roast them individually till they are aromatic.
- Grind them into a fine powder, and your sambar masala will be ready
- Store it in an airtight container and use it without any stress.
Idli Podi Recipe
Idli is also the go-to healthy breakfast option across the globe. You can make the usual idlis savoury with podi masala and eat them as is or pair them with sambar.
Ingredients:
- Channa dal - 1 cup
- Urad dal - 1 cup
- Pepper - 1/4 cup
- Jeera - 1/4 cup
- Dry red chillies - 3 cups
- Curry leaves
- Hing - 1 tablespoon
- Salt - 1.5 tablespoons
- Sesame seeds - 1/3 cup
- Oil for roasting
Instructions:
- Take a pan, add in oil, and dry roast all the ingredients separately, one by one.
- Then, let them cool down, grind them to a smooth powder, and sieve it to get a fine powder.
- Store it in an airtight container before the next use.
Rasam Masala Recipe
To add some depth to the classic South Indian rasam, you can make homemade rasam masala and add it to the dish.
Ingredients:
- Coriander seeds - 1 cup
- Cumin seeds - 2 tablespoons
- Black peppercorns - 1/4 cup
- Dry red chillies - 15 - 20
- Toor Dal - 1/3 cup
- Chana dal - 2 tablespoons
- Turmeric stick broken - 1
- Curry leaves - 2 sprigs
Instructions:
- Take a pan to add in all the ingredients, and dry roast them well till aromatic.
- Once cooled down, grind the mixture to a smooth powder.

- Hing - 1 teaspoon
- Tamarind - small lemon size

- Dhaniya - 1 tablespoon
- Jeera - 1 teaspoon

- Dry red chilli - 5
- Curry leaves - 1 cup loosely packed
- Tamarind - small lemon size
- Salt
Instructions:
- To make the podi, add in oil and roast on slow flame till aromatic, then add the rest of the ingredients and cook till the curry leaves are a little crispy.

Drumstick Leaves Podi Recipe

- Oil - 1 teaspoon
- Channa dal - 1 tablespoon
- Urad dal - 1 tablespoon
- Dhaniya - 1 tablespoon
- Jeera - 1 teaspoon

- Moringa leaves - 1.5 cups loosely packed
- Tamarind - small lemon size
- Hing - 1/2 teaspoon

Instructions:
- Wash and dry the leaves completely.
- In a pan, add oil, channa dal, and urad dal, and saute till golden on a slow flame.
- Then, add the remaining ingredients and cook for a few more minutes.
- Finally, add the drumstick leaves and cook on a slow flame till they turn crispy. Just be a little patient; it will happen.
- Grind it into a coarse powder, adding hing and salt.
