The cake is an integral part of celebrations all across the world. From birthday parties to weddings, this sweet treat can add joy to every occasion. Whether it's children or adults, everybody loves cake. There are plenty of cakes available across India with numerous flavours. The range of these desserts starts from simple vanilla cake to exotic pinata cake. Realistic cakes that look like real objects, animals, etc. are also a trend nowadays.

Cakes give us an opportunity to showcase our skills and creativity through icing and decorations. It also opens the door to various experiments in flavour, which is why we have so many varieties of cakes today. Commonly, cakes are baked in an oven, but they can also be made on the stovetop. With the help of a pressure cooker, you can get a perfectly soft and fluffy cake without investing your money in an oven. Muffins and cookies can also be baked in it; just make sure the pressure cooker is made of aluminium and has a heavy bottom.

Vanilla Chocolate Chip Cake


Ingredients 

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup of milk
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter (melted)
  • 3 tablespoons chocolate chips

Method 

  • Place a pressure cooker on the stove, place a separator on the bottom of the cooker, and heat it on high heat. Don't use the gasket on the lid; cover it. Heat it for 10 minutes or so. Don't use the whistle.
  • Brush a baking tin with oil and dust it with flour. Tap off the excess and set aside till use.
  • Now make the batter. Take all the ingredients given in the list except chocolate chips and place them in a mixing bowl. Use an electric beater to mix the batter until it is smooth.
  • Pour this batter into the tin and sprinkle some chocolate chips on top.
  • Use a potholder and place the cake tin carefully into the centre of the pressure cooker.
  • Cover it and simmer it over the heat. Cook on low heat for 45–50 minutes.
  • When it is done. Open the pressure cooker and use a toothpick to check whether the cake is done. If the toothpick comes out clean, then the cake is done.
  • Remove it from the cooker carefully and cool it down completely.
  • Invert the cake pan on a plate, slice, and serve.
