Mondays can be the toughest to handle, whether you are a full-time homemaker or somebody who works a nine-to-five job. Not only are you trying to get over the Monday blues, but the carried over lethargy from the weekend can be a bit too much too. Most of us would love to take Mondays slow—or secretly wish that the weekend included this day as well. The reality is, Mondays end up being the busiest of days with everything from too many meetings to leftover weekend chores!

So, at the end of the day, do we ever feel like cooking up an elaborate meal? Of course not! What we need on Monday nights are the easiest dishes that are also delicious and uplifting. For me, this simple Monday-night meal is Buttered Peas with Crunchy Bacon and a side of toast. Here’s why. Firstly, this dish is very easy to cook up. Secondly, it’s packed with the goodness of a great winter veggie. Thirdly, it’s a total flavour bomb, thanks to the sweetness of the peas, the crunch of the bacon and the richness added by the butter. And fourth, you can have it out of a bowl while getting that much-deserved Monday night rest. What are you waiting for? Here’s the recipe for you to try tonight!

Ingredients:

1 cup fresh peas

5 bacon rashers    , chopped

½ tsp garlic, minced

1 tbsp olive oil

1 tbsp butter

1 lemon

½ tsp black pepper powder

Salt, to taste

Water, as required

Method:

1. Place the peas, water and salt in a pot, and boil under the peas are tender. Drain the water and set the peas aside.

2. Heat a pan on medium heat. Add the olive oil, bacon and garlic. Sautee the ingredients till the bacon turns crispy, which shouldn’t take more than a minute.

3. Now add the boiled peas, salt to taste and black pepper powder. Toss everything together to mix well.

4. Now add the butters and mix well.

5. Switch off the flame and transfer the contents in a bowl. Add the juice of half a lemon or more (depending on your taste), and serve hot with toasted garlic bread.
