Smooth, soft, tasty and melt-in-the-mouth, Boondi Laddoo is a round ball-shaped sweet dish prepared which is cherished all over India. The sweet treat is prepared with a wide variety of seeds and seasonings. Boondi Laddoo is a sweet treat that is served to guests widely during the Diwali festival. The dish is a bit time-consuming but the taste is so delicious that these laddoos are worth every ounce of effort. Here’s the recipe for Boondi Laddoo.

Cooking Time: 50 minutes

Servings: 20

Ingredients:

  • 1 cup besan
  • ¾ cup water 
  • 7-8 cloves
  • A handful of cashews
  • A handful of raisins
  • ½ tsp yellow food colour or turmeric powder
  • 2 tsp sugar candy
  • 5-6 cardamom or ½ tsp cardamom powder
  • Edible camphor
  • Baking soda
  • Salt 
  • 1½ cups cooking oil

For the sugar syrup:

  • 1 cup sugar
  • ¾ cup Water

Method:

  • Put gram flour, salt, baking soda and turmeric powder in a big bowl and mix them
  • Pour water to form a thick paste
  • Take a big wok and heat oil on medium flame. Take a spoon and drop a little batter into the oil, if it forms Boondi then the mixture has to be thinner. 
  • But if boondi is formed flat instead of round, then the batter has to be thicker.
  • Now, take a slotted ladle and hold it over the hot oil then pour gram flour batter. 
  • Next, tap the ladle carefully so that round Boondi drops into the hot oil.
  • Always wipe off the slotted ladle using a tissue or cloth before proceeding to the next batch.
  • Cook boondi but don’t let it become crisp. Once cooked remove it from the oil using another slotted ladle and put them on a tissue paper.
  • Continue making Boondi until the gram flour batter finishes.
  • Now, take a pan and heat it with sugar and ¾ cup of water. Stir it constantly while cooking.
  • Next, after some time put the ladle in the sugar syrup to check the consistency. 
  • Once the syrup showcases a single string between index finger and thumb then sugar syrup is ready to use. 
  • Turn off the flame once you get the correct consistency.
  • Take a big bowl, and put Boondi and other spices- cloves, broken cashews, raisins, sugar candy, edible camphor, and cardamom powder on it. 
  • Mix them and pour sugar syrup over them little by little. 
  • Mix all the ingredients well. Once the mixture is prepared and warm, start rolling laddoos.
  • Delicious golden yellow Boondi Ke Laddoo is ready to serve.

  • Maintain the consistency of gram flour batter to get round and tasty boondi
  • Add more flour if the batter needs to get thicker and if the batter needs to be thinner, add some teaspoons of water
  • Keep a minimum gap between the slotted ladle and heated work if you hold it too high over the oil Boondi will lose its shape
  • Don’t fry the Boondi in less oil so that it doesn’t lose its shape. Ladoo should float over the oil
  • Don’t overcook the Boondi. It doesn't have to be fried till crisp
  • Add sugar syrup little by little over the Boondi but don’t overput the sugar syrup 
  • Ensure to leave the Ladoo for a while until the crystallised sugar appears on it
  • Keep two slotted ladles for making Boondi Ladoo.
