The history of Bolu goes back to colonisation. The impact of hundred years of colonisation in the Indonesian archipelago can be traced through their local culinary tradition. Western influences on Indonesian cuisine is often found in baking, pastry, cake and bread-making techniques, introduced by Portuguese and Dutch colonials. "Bolo" is used to describe cake, or more precisely sponge cake, in Portuguese, inspired by the Indonesian word bolu. The Dutch introduced the word taart. Today, the term bolu, tar, or tart is used interchangeably to describe cakes or tarts. Bolu can be both steamed or baked. Most Bolus are served bare, without any frosting. Ingredients:

    ½ cup medium flour

    ½ tablespoon cornstarch

    ½ cup sugar

    1 teaspoon vanilla powder

    1 tablespoon milk powder

    1 teaspoon emulsifier (like egg yolk)

    4 eggs

    1 egg yolk

    ½ cup butter (melted)

For garnishing:

    5 cups whipped cream

    4 ounces grated cheese

Method:

    Preheat the oven to 350 degrees.

    Prepare a square cake pan with butter and place parchment paper in it.

    In a mixing bowl, add the flour, sugar, cornstarch, milk powder, vanilla powder, emulsifier, eggs and yolk. Beat it with a hand mixer until stiff peaks form.

    Take a small amount of batter and combine it with the melted butter, then return the mixture to the bowl. Stir it till it combines. Pour it into the cake pan. Use a spatula to smooth the surface.

    Bake the cake for 30 to 40 minutes, then let it cool.

    Place the cake on parchment paper. Apply whipped cream and shredded cheese on it and roll it into a log. Keep it in the fridge to chill.

    Top it with more whipped cream and sprinkle cheese before slicing and serving.
