Chai is one of the most important parts of the everyday life of most Indians. Not just Indians but most people across the world thrive on tea. But turns out that chai, is an 'emotion' in India, at least that’s what chai lovers are claiming. Is that why we have so many varieties of it? From tandoori chai to Irani chai, masala chai and so on, the options are multiplying every day. And just when I thought it can’t get better, I came across Biryani chai- a name only a true foodie can come up with.  

To be honest, I was put off by the mention of it, biryani being fused with chai, how can someone be on board with that? But actually, biryani chai gets its name due to its technique, this chai is actually prepared in layers like how biryani is. Just how the rice dish is layered with meat, rice and spices when prepared and the same is done with this tea. The difference being, biryani chai has layers of condensed milk, black tea and lots of froth at the top.

It is said to have been inspired by a Malaysian/Thai beverage and one look at the layered tea will make you try it as soon as possible Looking to make it at home? It is super easy! Here’s the full recipe of Biryani Chai:

Ingredients:  

2 cups water

2 crushed elachi  

2 cloves

1 cinnamon stick

3 tsp tea leaves

3 tsp condensed milk

1/2 cup cold milk

1 pinch cinnamon powder to sprinkle

Method:  

1. Pour the condensed milk in the glass.  

2. Heat water and add all the spices and tea leaves. Strain and set aside. Discard the spices.  

3. For froth, take the cold milk and start to whisk it.  

4. Once the milk increases in quantity, the froth is developed. Now slightly microwave the milk for 10 seconds.

5. Now take the glass with condensed milk, pour the frothed milk from a height on top of the condensed milk.

6. Insert a thin straw and pour the strained tea through the straw on the milk.  

7. Top it with dollops of foam on top. Sprinkle some cinnamon powder on top before serving.
