Bhumi Pednekar is gaining worldwide recognition through her critically acclaimed work and the most recent example of that is her Disruptor of the Year Award at Indian Film Festival of Melbourne (IFFM) 2023. And the true definition of an artist is working hard and at the same time, playing harder. So, after winning the prestigious award at IFFM, the actress treated herself to a wonderfully delicious pie.
Half of Bollywood is present in Australia for this prestigious film festival and Bhumi is one of the esteemed guests there. She was applauded by the entire fraternity and the audiences for her performances and cheered for the actress. After doing all of this, like a true foodie, Bhumi went to a beautiful restaurant in Melbourne to treat herself to some well deserved dessert.
She enjoyed a delicious apple pie with some delectable ice cream. The pie looked lovely, with a rich crust and soft, flaky inside. Along with that, a big scoop of ice cream was also on the table. Bhumi took a big, chunky bite, with a generous portion of pie and a spoonful of ice cream. Immediately she went into a state of bliss and it was very evident that she loved the dessert a little too much!

Ingredients
For the Pie Crust
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, cold and cubed
- 1 teaspoon salt
- 6-8 tablespoons ice water
For the Filling
- 6-7 medium-sized apples, peeled, cored, and thinly sliced
- ¾ cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter, cut into small pieces
Method
- In a large mixing bowl, combine the flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, and mix with a fork until the dough starts to come together. Be careful not to overmix; the dough should hold together when gently squeezed.
- Divide the dough into two equal portions, shape them into discs, and wrap each disc in plastic wrap. Refrigerate for at least 1 hour before using.
- Preheat your oven to 190°C.
- In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Toss the mixture until the apples are well coated.
- Roll out one disc of the chilled pie crust on a lightly floured surface to fit a 9-inch pie pan. Carefully transfer the crust to the pan, gently pressing it into the bottom and sides.
- Pour the apple filling into the pie crust, making sure to distribute it evenly.
- Dot the top of the filling with small pieces of butter.
- Roll out the second disc of pie crust and place it over the filling. You can either cover the pie completely or create a lattice pattern by weaving strips of dough over the filling.
- Trim any excess dough hanging over the edges and crimp the edges to seal the pie.
- Place the pie on a baking sheet to catch any drips. Brush the top crust with a little milk or beaten egg for a golden finish.
- Bake in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the filling is bubbling. If the edges of the crust start to brown too quickly, you can cover them with strips of aluminium foil.
- Once baked, remove the pie from the oven and allow it to cool on a wire rack before serving. This helps the filling set.
- Slice the homemade apple pie into wedges and serve warm or at room temperature. You can pair it with a scoop of vanilla ice cream for an extra special treat.
