The result is succulent, well-seasoned chicken pieces with a smoky flavour from the grill or cooking process.

   

  • Bihari Chicken Kabab   

The marination process is crucial in creating the rich taste that defines Bihari Chicken Kabab. The chicken is marinated in a mixture of yoghurt, mustard oil, ginger-garlic paste, and a wide range of spices. However, the star of the show is the poppy seed paste that is used in marination. The barbecue pieces are then barbecued until golden and delicious.   

  • Bihari-Style Chicken Curry   

This dish can change your dinner game within minutes. What sets this dish apart is the goodness of the potato and the meatiness of the chicken. The dish is often cooked or simmered to perfection, allowing the flavours to meld and the chicken to tenderize. It can be served with steamed rice or roti.   

  • Champaran Litti Chicken    

This dish features litti along with the chicken. For the unprepared, litti is a traditional wheat flour dough ball stuffed with roasted gram flour and spices. Here, instead of chokha, litti is served with chicken curry. You have to prepare both of these recipes separately and stir-fry on a tawa for 2–3 minutes.
