Life’s not easy or fair, but chocolate certainly helps, right? So, isn’t it about time you put that jar of Nutella to good use? Nutella, or any good chocolate- hazelnut spread can be used to make a range of unique and tempting desserts. Personally, I find the plain Nutella a bit too dense and sweet, so I do not quite understand people’s obsession with eating multiple spoons of the spread straight from the jar.

Much like Pain au chocolate or a croissant, the puffy bread helps mask the excess sweetness of Nutella, making the whole dessert work on multiple levels. Flavourwise, it satiates all your rich, chocolate cravings, and in terms of texture too, it gives you quite a blend. The bread is soft and flaky, topped with rich and dense Nutella.

This recipe of Nutella fills is by ace pastry maker Naveenprasad Shetty, who is the Executive Pastry Chef, Shangri-La Bengaluru. Follow the recipe to the T, and who knows, you may as well make a 5-star level dessert in the comfort of your own home.  

Recipe: Nutella Fills

Ingredients List

Pre-baking Ingredients

  • 300 gm Flour
  • 60 gm Salt
  • 30 gm Sugar
  • 18 gm Gluten
  • 3 gm Improver
  • 9 gm Yeast
  • 75 ml Water
  • 200 gm Butter
  • 90 ml Milk

Post-baking Ingredients

  • 15 gm Nutella
  • 10 gm Roasted Hazelnut

Method

  1. Mix all the pre-baking ingredients in a blending machine and gradually increase the rotation speed.
  2. After the dough is ready, leave it for 24 hours to set.
  3. Once the dough sets properly, spread out the dough and apply butter on it. Fold the dough to make two layers.
  4. Leave it aside for another 30 minutes.
  5. Prove the dough for one hour before baking.
  6. Bake the dough at 170 degrees centigrade for 14 minutes. Once the dough bakes properly, let it cool for 15 minutes.
  7. Fill the baked dough with Nutella and generously apply it to the surface. Crush the roasted hazelnut and sprinkle it on top.
  8. You can make addition and substitution depending upon the availability of the ingredients, make sure you measure all the ingredients before you start.
