Ingredients:
For The Fruit Mix:
500g mixed dried fruits
150g cherries, halved
100g orange peel
Zest of 1 lemon
150ml brandy
For The Cake Batter:
250g unsalted butter, softened
200g light brown sugar
4 large eggs
250g refined flour
1 tsp baking powder
1/2 tsp ground cinnamon
1/2 tsp vanilla essence
75g chopped almonds
Method:
⦁ To start with, combine the dried fruits, cherries, orange peel, lemon zest and brandy in a large bowl that can be sealed. Let it soak overnight.
⦁ Preheat Glen’s Digital OTG 5035 at 150°C for half an hour.
⦁ To prepare the batter, place the butter and sugar in a large mixing bowl and mix until the sugar is dissolved and the butter turns creamy.
⦁ Add eggs one by one, while whisking constantly until you get a smooth liquid.
⦁ Mix in the flour, baking powder, cinnamon, vanilla and chopped almonds.
⦁ Gently fold the ingredients in to get a smooth batter. Do not whisk the batter.
⦁ Now, fold in the soaked fruit mix and pour the batter into a lined cake tin.
