Ingredients:

  • 1 cup bajra (pearl millet)
  • ½  cup moong dal (split yellow lentils)
  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger, grated
  • 1 green chilli, finely chopped
  • A pinch of asafoetida (hing)
  • ½  teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

Method:

  • Rinse the bajra and moong dal under running water. Soak them in water separately for about 30 minutes. Drain and set aside.
  • Heat ghee in a pressure cooker or a heavy-bottomed pan. Add cumin seeds and let them splutter. Add grated ginger, chopped green chilli, and asafoetida. Sauté for a minute.
  • Add the soaked bajra and moong dal to the pan. Stir well to combine with the tempering.
  • Sprinkle turmeric powder and salt over the mixture. Give it a good stir.
  • Pour 4 cups of water into the pressure cooker or pan. Cover and cook on medium heat. If using a pressure cooker, cook for about 4-5 whistles. If using a pan, simmer until the bajra and dal are tender and cooked thoroughly. It may take around 45 minutes to 1 hour.
  • Once cooked, let the pressure release naturally. Open the cooker or pan and give the khichdi a gentle mix. Adjust the consistency by adding more water if desired.
  • Garnish with fresh coriander leaves and serve hot with a dollop of ghee on top. Bajre Ki Khichdi pairs well with yoghurt, pickles, or a side of papad.
