Ingredients:

•1 cup granulated sugar

•2 large eggs

•½ teaspoon salt

•½ cup unsalted butter

•2 cups diced apples

•2 cups all-purpose flour plus 2 teaspoons

•2 teaspoons ground cinnamon plus ½ teaspoon

•2 teaspoons vanilla extract

•½ cup milk

•1½ teaspoons baking powder

For the garnish:

•1/4 cup granulated sugar

•1/4 cup ground cinnamon

•1/2 cup butter melted

Method:

•Set the oven to 375°F. Make sure to remove any excess flour from the muffin tins after coating them with shortening, butter, or baker's spray, or coating them generously with flour and shortening.

•In a medium bowl, sift together 2 cups of flour, baking powder, salt, and 2 teaspoons of cinnamon. Place aside.

•Combine 2 teaspoons of flour and 1/2 teaspoon of cinnamon. In another bowl, coat the diced apples with the flour and cinnamon mixture. Place aside.

•For around 3 minutes, cream together the butter and sugar until it becomes lighter in colour. Add one egg at a time, being sure to fully incorporate after each addition. Combine vanilla.

•Alternately fold in the milk and flour mixtures gently. Stir just enough to mix. Fill muffin cups 2/3 to 3/4 full with the mixture, then fold in the diced apples. About 30 minutes of baking time, or until a toothpick or skewer inserted in the centre comes out clean.

•While the muffins are baking, make the topping by melting the butter and letting it cool somewhat. Put the butter in a separate bowl large enough to dip the muffin tops in. Granulated sugar and cinnamon should be combined in a separate basin and left aside.
