Ingredients:
- 500g boneless pork
- ½ cup grated coconut
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 tbsp ginger-garlic paste
- 2 tbsp red chilli powder
- 1 tsp turmeric powder
- 1 tsp garam masala powder
- ¼ cup coconut oil
- Curry leaves
- Salt to taste
Method:
- Cut the pork into small pieces and marinate with salt, turmeric powder, and red chili powder for at least 30 minutes.
- In a pan, heat coconut oil and add mustard seeds, cumin seeds, and fennel seeds. Once they start to splutter, add the grated coconut and fry until it turns golden brown.
- Add ginger-garlic paste and fry for a minute.
- Add the marinated pork and mix well. Cook on medium heat until the pork is tender and fully cooked.
- Add garam masala powder and curry leaves. Fry for another minute and turn off the heat.
- And that's it! Serve hot with some steaming ghee rice or enjoy it as a snack.
