Cookies are the epitome of a sweet indulgence, satisfying our cravings and bringing joy with every bite. While they often get a bad reputation for being unhealthy, it doesn't have to be the case. With a little creativity and ingredient swaps, cookies can be transformed into a healthier treat without compromising on taste. By using whole grain flours, natural sweeteners like honey or maple syrup, and incorporating nutrient-rich add-ins like nuts or dried fruits, we can create cookies that not only provide a delightful sweetness but also offer fibre, vitamins, and minerals.

Embracing an almond version of the cookie allows us to enjoy the comforting nostalgia of this beloved treat while nourishing our bodies with ingredients that support our well-being. One of the key reasons why almond cookies are considered healthier is because almonds themselves are packed with nutrients.

Almonds are an excellent source of healthy fats, including monounsaturated fats, which have been linked to heart health and lowering bad cholesterol levels. They also provide a good amount of fibre, protein, vitamins, and minerals such as vitamin E, magnesium, and potassium. Incorporating almonds into cookies increases their nutritional value and makes them more satiating compared to cookies made with refined flour and unhealthy fats

Ingredients:

  • 1 ½ cups almond flour
  • ½ cup coconut flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup coconut oil, melted
  • ¼ cup pure maple syrup or honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • Sliced almonds for topping (optional)

Method:

  • Preheat your oven to 175°C and line a baking sheet with parchment paper.
  • In a medium-sized bowl, whisk together the almond flour, coconut flour, baking soda, and salt until well combined.
  • In another bowl, mix the melted coconut oil, maple syrup or honey, vanilla extract, and almond extract until smooth.
  • Gradually add the wet ingredients to the dry ingredients, stirring well until a thick dough forms.
  • Scoop about one tablespoon of dough and roll it into a ball. Place the ball onto the prepared baking sheet, and repeat with the remaining dough, leaving some space between each cookie.
  • Flatten each ball slightly with your palm or the back of a fork. If desired, top each cookie with a few sliced almonds for added crunch.
  • Bake for 10-12 minutes, or until the edges turn golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
