While we all love ripened mangoes, raw mangoes have a separate fan base. When consumed with red chili powder and salt on the top, raw mangoes can take away all your worries. 

Kacha aam could be eaten raw, or even transformed into so many delicacies. Among the most popular delights made up of raw mangoes, there is ‘Aam Ki Launji’, heard of it before? Aam ki launji is a popular gem from Rajasthan. It falls somewhere between a chutney and a pickle. This sweet and spicy raw mango delight is cooked in jaggery/ sugar and whole spices. Very easy to make, this famous Rajasthani condiment requires the most basic ingredients and goes well with chapati, parantha and rice.

Aam ki launji could be a perfect companion of your regular dal-chawal. Believe me, it could get ready in no time and requires no hard work. It could be a great addition to your regular meal and will be a delight for your taste buds. Wanna know how to make this delicious and irresistible aam ki launji at home?? Don’t worry, we have sorted it for you. Follow the steps below and make this easy and tempting mango delight at home.

Ingredients 

  • 5 raw mangoes (medium sized) 
  • 5 tbsp sugar or ½ cup powdered jaggery 
  • ½ tsp turmeric powder 
  • 2 tbsp oil 
  • ½ tsp cumin seeds 
  • 1 tsp fennel seeds 
  • ½ tsp onion seeds or also known as kalonji 
  • Pinch of Asafoetida  
  • Salt to taste 

Method 

  • Start by peeling the raw mangoes. Then, remove the seeds and cut the mangoes into thin slices. 
  • Heat a pan and add four cups of water. Add salt and turmeric powder to the mango.  
  • Add 3 tbsp sugar to the water and add the mango slices. Blanch the mangoes. 
  • Heat another pan and add oil. Add cumin seeds, onion seeds, fennel seeds as well as asafoetida. Sauté well. 
  • When the spices become aromatic, add in the blanched mango slices followed by the remaining sugar. Add salt and give it a good mix. Cook it for a few minutes but not too long. 
  • Pour the launji in a bowl and serve!
