Kulfi is a must-have frozen dessert in summers that is usually made with milk, mawa/khoya, which is combined with a bunch of flavours derived from fruits, nuts or syrups. It is said that Kulfi was invented in the Mughal era. India always relished milk-based desserts, but this novel way of eating frozen milk was something new and it caught on with everyone. Kulfis are of many kinds, but have you ever tried giving your homemade kulfi an interesting spin and made it with leftover bread crumbs instead. Yes, making kulfis can be that easy. Drooling already? Here's the recipe.

Ingredients-

  • 1 litre milk
  • Half cup milk powder
  • 2 pieces of bread
  • Half tablespoon cardamom powder 
  • 3-4 strands of kesar
  • Half cup sugar
  • Mixed dry fruits

Steps in the making-

  • Take a big saucepan and pour milk into it. Keep boiling it on medium flame for about 20-30 minutes or until the consistency of the milk reduces to half. 
  • Now add milk powder into the milk and again stir for a while. After some time add the slices of bread or breadcrumbs into the pan.
  • For flavouring, add cardamom powder and kesar into it. Keep stirring for a while longer and then turn off the flame to let it cool down.
  • After the mixture has cooled down, take a mixer grinder and add this mixture into it and blend until smooth.
  • After blending, refrigerate for at least 4- 5 hours. Then take it out and again blend in a mixture grinder to receive a fine texture of your kulfi. 
  • Finally add finely chopped mixed dry fruits of your choice into the kulfi mixture.
  • Now take moulds into which you would like to set your kulfi. 
  • Freeze for 3 hours at least or until your kulfi is properly set.
  • Ta da! Your homemade kulfi is ready to relish!
