History Dated Back To 1905  

The Royal Indian Hotel's journey began with Ahmed Hussain, who brought the flavors of the nawabi kitchen of Lucknow to Kolkata. Back in 1905, it was a humble eatery, offering just three dishes: Mutton Chaap, Mutton Qalia, and Khushka. Khushka, a type of fragrant yellow pulao, quickly became a favourite among patrons.

As time went on, the restaurant’s menu expanded, thanks to Hussain’s son, Mehboob Ali. In the 1940s, he introduced biryani to the Royal Indian Hotel’s offerings. This was no ordinary biryani—it was crafted in the traditional Lucknowi style. biryani with tender pieces of mutton with long-grain Basmati rice, infused with saffron and mix of spices. 

For decades, the Royal Indian Hotel’s biryani remained true to its roots, staying faithful to the Lucknowi tradition by excluding the popular Kolkata addition of potatoes (alu). This dedication to authenticity is what continues to set the Royal Indian Hotel apart, making it a beloved destination for those seeking a true taste of Mughlai cuisine. 

From Past To Present: How The Menu Changed  

The menu of the Royal Indian Hotel has expanded to include many dishes, like the Mutton Pasanda, Mutton Raan Mussalam, and Royal Lagan Chicken, but the signature item continues to be the Royal Mutton Chaap.  

The Sheermal Paratha is also a popular pick, best paired with Galawati Kebab. End on a sweet note with their Shahi Tukra. During Ramadan, their Haleem is highly famous.
