Laal Maas

Belonging to the cuisine of Rajasthan, the term laal maas means “read meat”. The most important ingredient of this dish is mathania, a special variety of Rajasthani red chilli which gives it an extreme hot flavour. Made by slow cooking mutton with raw spices, laal maas has a spicy and smoky flavour that used to be an all-time favourite of the Rajput warriors in the state.  

Rista

This mouthwatering and fiery dish is from the land of Kashmir. Made with lamb meat, it is cooked in a tomato-based gravy which is flavoured with garlic, ginger, red chilli powder and lots of other spices. Rista is a rich and aromatic dish that is mostly enjoyed during cold weather. It is best paired with naan or jeera rice. 

Phaal Curry 

The most interesting fact about phaal curry is it is prepared with Naga jolokia, one of hottest chillies in the world. This curry is made by cooking chicken with tomatoes, ginger and hot chillies. Kolhapuri Chicken 


As the name suggests, this dish belongs to Kolhapur which is in the state of Maharashtra. This spicy dish is made by marinating chicken with a blend of spices which includes cloves, dried red chillies and garlic paste then cooked in a coconut-based curry. If you are a hardcore fan of non-veg food, then Kolhapuri chicken is a must try. 

Nagamese Pork Curry 

This pork curry is a gift of Nagamese cuisine which belongs to the people of Nagaland. Nagamese pork curry is made with several exotic spices including bhut jholokia, a kind of chilli that originated in Nagaland. Just like Naga jolokia, this also belongs to the list of spiciest chillies in the world. It uses bamboo shoots for seasoning and can also be prepared with chicken or fish. 

Saoji Chicken Curry 

This is another spicy curry from the land of Maharashtra. It belongs to the Nagpur cuisine and its roots are linked to the Saoji community of the city. Prepared with garam masala, dried red chillies, black pepper, powdered coconut and cinnamon, it is best served with steamed rice.  

Vindaloo 

Vindaloo is a well-known Goan delicacy that is connected with the Portuguese history. Made with pork meat, spicy chilli peppers, garlic, vinegar and other spices, this dish is going to steal your taste buds if you enjoy spicy food. Vindaloo is best served with naan or basmati rice.
