Khichdi Uttapam

All you need for uttapam is a thick batter and a few fine-chopped vegetables. Give a good whisk to leftover khichdi and spread it on a hot skillet in the shape of a thick pancake. Add chopped onions, green chillies, capsicums, and fresh coriander leaves on the top and cook on both sides. You can enjoy it with coconut chutney or sauce.

Khichdi Poha

For this comforting meal, heat a kadhai, and add some oil to it. Fold in mustard seeds, green chillies, and curry leaves. Once the seeds start to crackle, add chopped onions and turmeric powder. As the onions become translucent, pour in leftover khichdi and soaked flattened rice (poha). Mix it well and serve the dish hot with a garnish of coriander leaves and a drizzle of lemon juice.

Khichdi Paratha

Khichdi paratha is the easiest recipe you can have in the morning. Mix the leftover khichdi with wheat flour and add some salt, carom seeds, red chilli powder, finely chopped green chillies, and amchur (mango) powder on the top. Knead the dough and make crispy paratha that you can pair with your favourite chutney, sauce, and raita. 

Khichdi Frittata

Khichdi, a traditional Indian dish, can be used to make frittata, an Italian delicacy. Beat eggs and khichdi together. Add chopped vegetables, grated cheese, and a few spices to the combination. Pour this concoction into a baking tray and cook in the oven until the top turns golden brown. Slice the frittata and enjoy with ketchup.

Khichdi Upma

Much like khichdi, upma is also a quick breakfast dish you can make in under 30 minutes. Prepare the tempering of oil, curry leaves, mustard seeds, and green chillies. Pour in leftover khichdi into the pan and stir it until heated through. Add garnishing of freshly chopped coriander leaves and serve the dish hot.

Khichdi Pancakes

Leftover khichdi can be used to make a desi version of pancakes. Mix the dish with gram flour, chopped spinach leaves, spices, and grated carrots. Take a ladleful of this concoction and pour it into the pan. Cook both sides until they turn brown, and enjoy it with yoghurt or chutney.
