Summers are our favourite. Be it the heat or the summer special foods, we wait for this season all year long. It is almost impossible for us to imagine our summers without bright sunny days or several days of vacation. While summer’s all about joy, we cannot get over our favourite summer fruits.

Ice Apples or Tati Munjalu are our most-loved summer fruit and we like hoarding them. Apart from being hydrating and delicious, Ice apple have several health benefits and are believed to be loaded with nutrients.

While the fruit is extremely flavourful on it's own do you know that there are several recipes you can try and play around with? Here are a few recipes you can try with this summer specialty.

1. Ice Apple Sharbat

Ice apple sharbat is a simple and easy-to-make drink that is perfect for beating the heat. Here's a recipe to make ice apple sharbat at home:

Ingredients:

  1. 4-5 ice apples, peeled and mashed
  2. 1/4 cup sugar
  3. 2 cups chilled water
  4. Juice of 1 lemon
  5. A pinch of salt
  6. Mint leaves for garnish

Method:

  1. Peel the ice apples and mash them in a bowl.
  2. In a separate bowl, dissolve the sugar in chilled water and add a pinch of salt.
  3. Add the mashed ice apple and lemon juice to the sugar water mixture and stir well.
  4. Pour the mixture into a blender and blend until smooth.
  5. Pour the mixture through a fine sieve to remove any lumps.
  6. Serve the ice apple sharbat chilled, garnished with mint leaves.

2. Bengali Ice Apple Wada

Bengali ice apple wada is a delicious and unique snack that is popular in the eastern region of India, particularly in West Bengal. It is a savoury dish made with a crispy outer layer and a soft and flavorful filling made with ice apple pulp and spices.

Ingredients:

  1. 1 cup ice apple pulp
  2. 1 cup grated coconut
  3. 1 cup besan (gram flour)
  4. 2 tbsp rice flour
  5. 1 tsp cumin powder
  6. 1 tsp coriander powder
  7. 1 tsp red chilli powder
  8. 1 tsp ginger paste
  9. 1 tsp garlic paste
  10. Salt to taste
  11. Oil for deep frying

Method:

  1. In a mixing bowl, combine the ice apple pulp, grated coconut, besan, rice flour, cumin powder, coriander powder, red chilli powder, ginger paste, garlic paste, and salt. Mix well to form a thick batter.
  2. Heat oil in a deep frying pan.
  3. Take a spoonful of the batter and drop it gently into the hot oil. Fry until golden brown and crispy on both sides.
  4. Remove the wada from the oil and place them on a paper towel to remove excess oil.
  5. Serve hot with chutney or ketchup.

3. Ice Apple Kheer

Ice apple kheer is a delicious dessert made with tender coconut flesh, milk, and sugar, and flavored with cardamom powder. It is a refreshing twist on the traditional kheer or rice pudding and is perfect for summers.

Ingredients:

  1. 1 cup tender coconut flesh (chopped into small pieces)
  2. 4 cups milk
  3. 1/2 cup sugar
  4. 1/2 tsp cardamom powder
  5. 1 tbsp ghee
  6. Almonds and pistachios for garnishing

Method:

  1. Heat ghee in a heavy-bottomed pan and add the chopped tender coconut flesh. Cook for 2-3 minutes on medium flame.
  2. Add 4 cups of milk and stir continuously until it comes to a boil.
  3. Reduce the flame to low and let the milk simmer for 10-12 minutes, stirring occasionally.
  4. Add sugar and cardamom powder to the pan and stir well.
  5. Let it simmer for another 5-7 minutes until the kheer thickens to a creamy consistency.
  6. Turn off the flame and let the kheer cool down to room temperature.
  7. Once cooled, refrigerate the kheer for 2-3 hours.
  8. Garnish with chopped almonds and pistachios before serving.

4. Ice Apple Sorbet

One delicious way to enjoy ice apple is by making a sorbet. Here's a simple recipe to make ice apple sorbet at home:

Ingredients:

  1. 10 ice apples
  2. 1/2 cup sugar
  3. 1/2 cup water
  4. 1 tablespoon lime juice
  5. Mint leaves (optional)

Method:

  1. Peel the ice apples and remove the flesh. Discard the outer layer and hard seed.
  2. In a blender, blend the ice apple flesh until it becomes a smooth puree.
  3. In a saucepan, combine sugar and water and heat on medium heat until the sugar dissolves. Let the mixture cool.
  4. Add the sugar syrup and lime juice to the ice apple puree and blend until well combined.
  5. Pour the mixture into a container and freeze for 4-6 hours, stirring every hour.
  6. Serve in bowls or glasses and garnish with mint leaves (optional).

5. Ice Apple Rose Milk

Rose milk is a sweet beverage made by mixing milk, sugar, and rose syrup. The combination of ice apple and rose milk makes for a delicious and cooling summer drink.

Ingredients:

  1. 1 cup ice apple
  2. 2 cups milk
  3. 2 tbsp rose syrup
  4. 2 tbsp sugar
  5. A pinch of cardamom powder (optional)

Method:

  1. Wash and peel the ice apple. Cut it into small pieces and set aside.
  2. In a blender, mix the milk, rose syrup, sugar, and cardamom powder (if using). Blend until everything is well combined.
  3. Pour the mixture into a glass and add the ice apple pieces on top.
  4. Serve chilled and enjoy your refreshing ice apple rose milk!

6. Ice Apple Cooler

 Ice apple has a jelly-like texture and a subtle, sweet flavor that makes it a perfect ingredient for making a refreshing summer drink - Ice Apple Cooler.

Ingredients:

  1. 10-12 ice apples
  2. 1 lemon, juiced
  3. 2-3 tablespoons of sugar (or as per your taste)
  4. A pinch of salt
  5. 4 cups of chilled water
  6. Mint leaves for garnish

Method:

  1. Rinse the ice apples under running water and peel off the outer brown skin using a sharp knife.
  2. Cut the ice apples into small pieces and transfer them to a blender.
  3. Add the lemon juice, sugar, and salt to the blender.
  4. Blend the mixture until it becomes smooth.
  5. Pour the blended mixture through a fine mesh sieve to remove any fibrous bits.
  6. Add chilled water to the mixture and stir well.
