* Palak Paneer

Palak paneer is one of the most nutritious and loved recipes in India. It is made by immersing fresh blocks of paneer in a gravy made from spinach puree, tomatoes, onions, and some Indian spices. The earthy flavours of spinach complement the creamy and cheesy flavours of cottage cheese very well. One can add a lot of green chillies to this dish to make it more flavourful as both cottage cheese and spinach are quite neutral in taste. The tanginess of tomato also makes the dish taste even better. This goes very well with both roti and rice.

* Dhania Aloo

Dhaniya aloo is another famous Indian recipe that is easy to make but it's quite tempting. This dish is specifically made from some baby potatoes that are cut into small cubicle pieces. Spices such as coriander seeds, cumin seeds, curry leaves, red chillies, mustard seeds, and some asafoetida are sautéed along with the cut pieces of potatoes. The main ingredient besides potatoes in this dish is fresh coriander leaves that are properly distributed and mixed with all the spices and pieces of potatoes. Coriander helps in enhancing the flavour as well as the health quotient of a dish.

* Palak Corn

Palak corn is another famous dish made in India with spinach and boiled corn. It is a very soothing and soul-bending dish that requires only a handful of ingredients to be prepared. Spinach puree along with ginger garlic paste and some tomatoes is mixed with boiled corn to make a very simple yet impactful dish. This is also very good for the digestive system as it's not extremely spicy. The fascinating aspect of this dish is that it can be diluted with a little bit of water to make a delicious soup. Or it can be consumed as it is with some roti or even boiled rice.

* Cauliflower And Peas

Cauliflower and peas is a  great sabzi combination because it combines the goodness of two different vegetables. This dish is made in many north Indian states, especially during winter when one gets the choicest varieties of peas. This dish is made by mashing both cauliflowers and peas in a food processor. A little bit of butter is also added to these mashed vegetables to make them even more soft. Now the mixture of mashed cauliflower and peas is cooked in a pan with some vegetable oil and spices, such as cumin seeds, red chilli powder, salt, and turmeric. The dish is extremely digestive and one of the tastiest green vegetable main course dishes that one will find.

* Keerai Poriyal

Keerai Poriyal is made from kale which is a part of the cabbage family. This is a healthy and divine leafy sabzi that one can easily make at home. What makes this dish so tempting is the fact that it is mixed with some chickpeas that give not just a good taste, but also a very different texture to the dish. Another version of this dish includes adding paneer instead of chickpeas. If one is a non-vegetarian, then they can also add chicken or any other source of protein. The dish has a very subtle touch of vegetable oil and some basic spices.

* Palak Paratha

Palak paratha is also a very famous main course dish made in India during winter. The dish is made by making dough from wheat flour, ghee, salt, red chilli powder, and spinach leaves. All these things are mixed well to roll some circular parathas that are cooked on a flat pan with butter. Instead of adding chopped spinach leaves, one can also add pureed spinach leaves to the dough as it is a lot easier. Palak paratha can be served with some fresh curd and achaar of choice.
