* Sweet Kale Cheesecake

Cheesecake is a luscious and creamy dessert that is enjoyed by a lot of people. But it certainly is not one of the healthiest desserts that one can have. A great way to make this dessert less unhealthy and sneak in some good nutrition is by adding Kale. This cheesecake will have a gorgeous green colour and also is pretty simple to make at home. The best part is that one can make it in vegetarian and vegan varieties too. It is made by using other healthy ingredients like pumpkin seeds, walnuts, cacao crust, and dates to avoid using any sugar. One has to simply put ¾ cup of kale, maple syrup, lemon juice, one banana, nuts, and a pinch of salt in a blender. The blended mixture must be transferred into a mould and frozen for at least five hours before being eaten.

* Green Ice Cream

Ice cream is one such dessert that most children enjoy, especially during the summer season. Now that summer is just around the corner, it is a great idea to make some green ice cream at home using some milk and one's favourite green vegetable. The whole recipe is very simple to make as one has to make a simple green smoothie by using any green vegetable, including spinach, kale or even avocados if one wants. Now this smoothie should be mixed with some high-fat milk or cream and one can also add some nuts for that extra crunch. For sweetening the ice cream, one can use some dates. The mixture should be frozen in ice cream moulds for at least 5 to 6 hours until they become fully frozen.

* Spinach And Banana Muffins

Spinach and banana muffins are one of the most fibrous and high-nutrition dishes that one can make at home. To make these scrumptious and healthy muffins, one has to take a ripe banana that preferably has some brown spots as it's extra sweet. One can take the milk of their choice along with honey, a couple of eggs, grinded spinach mixture, melted butter, and some whole wheat flour along with baking soda. The muffins are made in pretty much the same way that one makes regular muffins. All the mixture has to be put in the moulds and baked in the oven at 185°C for 15 minutes until they become fluffy. 


* Zucchini Brownies

Zucchini brownie is already a very famous concept among vegetarians and vegans. Zucchini helps in baking the most chewy and soft brownies. The vegetable gets mixed with all the other ingredients so well that it's hard to even suspect its taste in the dish. To make the special brownies one would need to use all-purpose flour, baking soda, shredded zucchini, dry fruits, granulated sugar, vegetable oil, baking soda, and optional ingredients like choco chips. All of these ingredients have to be mixed to form a thick batter that has to be baked for at least 25 to 30 minutes until they become properly cooked.

Cucumber is a very refreshing and rejuvenating vegetable which is why it is used to make a lot of beverages, especially during the summer season. Another way to utilise the freshness of cucumber to the fullest is by making cucumber ice cream. One can simply take peeled cucumbers that are diced properly, lemon juice, milk, vanilla extract, honey and double- fat cream. All of these ingredients have to be blended properly to make a fine mixture. The mixture must be frozen after being put in the ice cream moulds for at least 4 to 5 hours so that it gets a firm shape.
