* Rice Muthiya

Muthiya is a popular Gujarati snack that is made out of using besan, methi and some spices. In this version of the Gujarati snack we use leftover rice instead of chickpea flour. It is a lip-smacking delicacy and a great way to use the leftover rice in your kitchen. What makes the snack so special is the fact that it is not deep-fried but steamed. This makes it a healthier version of a snack and you can enjoy it guilt-free. Take a bowl and add your boiled rice along with a handful of chopped coriander.

Now add handva flour to the mixture. In a separate bowl, take some whole wheat flour, add a little bit of oil to the mixture and mix everything thoroughly. Add the mixture of oil and whole wheat flour to the rice mix. The next step is to add some plain yoghurt, ginger, garlic and green chillies along with salt, red chilli powder, cumin powder, and jaggery. Now add some more vegetable oil to your dough and make small balls out of it. You can deep fry it and serve it fresh and crunchy.

Now roll it with the help of your palms in a circular shake and fry them.
