A large state with a rich and diverse cuisine, each of the cities is popular for specific dishes. One thinks of Jodhpur and one’s mind instantly transports to the spicy mirchi vadas. However, there are certain nuances of Rajasthani cuisine that are common, like the heat factor. 1.  Pitod Ki Sabzi

A vibrant curry with a yellow-red hue and flavourful taste, Pitod Ki Sabzi is a traditional Rajasthani delight. Since curries are commonly eaten for lunch, this gravy-dish works well in that regard. The curry is made with ginger, curry leaves, turmeric powder, garam masala and more. The highlight of the dish is the pitod, which is basically besan paneer. This pitod ki sabzi has chickpea flour dumplings dunked in it which are then mixed with the gravy. It appears to be like a paneer curry but you’ll be in for a surprise.  

2.  Jodhpuri Kabuli

This is a heavenly royal dish that is made with spices and vegetables. It is a decadent pulao from the Rajasthani royal fare. Belonging to the Rajasthani city of Jodhpur, the dish is made with layers of rice that are cooked with a hot and fiery gravy made of potatoes, tomatoes and onions. This gravy is cooked in yoghurt and spread on the rice along with a garnish of fried croutons and dry fruits like cashews, raisins, and almonds. 

3.  Gatte Ki Sabzi

Gatte, for the unversed, refers to dumplings made of gram flour. The round dumplings are rolled and steamed. Meanwhile, a thick and creamy gravy is prepared using yoghurt. The whipped yoghurt is flavoured with spices like carom seeds, fennel seeds, cinnamon and cardamom. The dumplings are thrown into this gravy and garnished with dry coriander leaves. Pair this curry with steamed rice or pooris for the best flavour.

4.  Rabodi Ki Sabzi

If you’ve been to Rajasthan and not had Rabodi yet, you’re missing out on something. This is such a quick and easy dish that it can be ready in minutes, given that you have the rabodi prepared beforehand. Rabodi is a mixture of buttermilk and makai (corn) that is spread out as thin sheets and dried. This rabodi can then be stored in a container and used to make curries like Rabodi Ki Sabzi. The sheets are cooked with buttermilk and a few spices and served hot.

5.  Panchmel Dal  

This legendary dal not only has a rich taste but a deeper history too. Panchmel Dal is believed to have been discovered during the Mahabharata when Bhim prepared it under disguise as a cook. The dal’s uniqueness comes from the combination of five lentils that go into the making of this recipe. The dal is spruced up with spices and mixed with steamed rice. Pair some papad and achaar for enhancing the taste of the meal.
