Gujarati cuisine is one of the richest and most vivid regional cuisines we know of. A touch of sugar goes into most curries, immense emphasis is laid on local and seasonal vegetables. Greens are used freely across the year, depending upon the availability, and not just in curries, but snacks and breads as well. A delectable use of spices and spice blends makes Gujarati food, mostly vegetarian, truly remarkable.

The Gujarati breakfast is something that we feel is criminally underrated. Contrary to popular belief, the Gujaratis do not have endless dhoklas for breakfast, there’s actually a range of dishes that make the Gujarati breakfast, a bustling affair.

Take the theplas for instance. Theplas look a lot like parathas, but are much thinner, and crispier in comparison. They are also roasted on a griddle. Many times the word ‘Thepla’ and ‘Khakras’ are used interchangeably. Khakra is more of a crispy cracker and is popular Farsan.

Here are some Theplas you can prepare for your breakfast soon

1. Mooli Thepla

Mooli is a Hindi word for radish. Grated radish is mixed with spices and radish greens, red chilli powder, green chillies et al and stuffed in a dough made with gram flour and wheat flour to yield a thepla so crisp, you won't be able to stop at one.
