Pav is soft and golden bun served alongside a flavourful bhaji and so many other dishes. They may not seem that important but actually THEY ARE! NO to Salt At Initial Stage 

Fermentation is an essential step when it comes to baking. To ferment the yeast, one must always use sugar and not salt. This is because salt can slow down the process of yeast growth and will prevent the dough from rising too much. One must add salt in the later stage and use sugar for better fermentation.

Butter Should Be At Room Temperature 

The butter in the Ladi Pav dough should always be at room temperature. It is advisable to use salted butter in the dough and if you are using unsalted butter, you can increase the quantity of salt accordingly. 

NO To Over kneading 

The Ladi Pav dough should be kneaded for at least 9 to 10 minutes, but one should not over knead the dough at any cost. When the dough is ready, it will become stretchy, and this will prevent it from sticking to the surface. 

Ladi Pav Formation 

One must carefully shape the dough and make sure that there are no cracks. It is advisable that one should take one portion of dough in one palm and using another hand, bring the edges together and pinch them lightly. Roll them for all the pavs and put them for baking. 

NO To Crowding 

Before putting the Ladi Pav for baking, it is essential to make sure that the dough balls have little space between them, but that space should not be too much. If the space would be too little or the dough balls would be too far from each other, the buns would not rise properly and would become flat.
