Beetroot is chock-full of nutrients including Vitamin C, potassium, manganese, fibre and iron. It also has fewer calories, lowers blood pressure in a matter of hours and improves athletic performance. Consumption of beetroot in the long term will stabilise blood pressure completely. You can add beetroot to your diet by following these suggestions below:

1. Bake Beetroot

Are you on a diet? Baked chips it is! Toss the beetroot slices in olive oil, parsley and rosemary and put them in the oven. You’ll be rewarded with a crispy, flavourful beetroot snack! While bland vegetables obviously help, having a bowl of beetroot chips won’t hurt. Don’t forget to sprinkle some salt after the chips are baked. You can also use baked beetroot in frittatas and pizzas.

2. Mash/Puree Beetroot

Beetroot and cabbage stuffing in a paratha sounds like a winning combination. But if you think this is spoiling the taste of a classic paratha, go for beetroot with cauliflower latkes, which will surely impress. One could go for making idlis too. If you struggle with meal prep every day, you can simply boil and make a puree of beetroot a night before. In the morning, simply add the puree to a cheela batter for extra goodness! In the evenings, one could make beetroot soup by combining the puree and stock. It is versatile!

3.  Roast Beetroot

Roasted beetroot can be used in chocolate puddings because cocoa and beetroot are very compatible with each other. This way, you will not have to rely on sugary treats, and can extract the benefits of natural sugar that is present in beetroot!

4. Ferment Beetroot

Our grandmas have taught us about the delicious mango and lemon pickles, but there was a lot being spoken about beetroot pickle which we casually may have overlooked. Beetroot pickle is truly delicious!

5.  Saute Beetroot

Beetroot is used quite commonly in stir-fries if you look at other Asian countries. Let’s try using some of these recipes for dinner so we can sleep on a light stomach. Beetroot goes really well with carrots and zucchini. You can also saute beetroot in poriyal.

We hope that you’ll enjoy making some of these recipes!
