I remember my first meal at a food truck. It was the year of 2007 and I was in my sixth grade. One evening, we were craving Chinese so my father decided to take us out for dinner. On the way, I kept asking him about where we were going but he would just respond with, “Just have some patience”. We ended up at the brightly-lit Defence Colony market and I thought that maybe we were going to a fine-dining restaurant. All my assumptions cleared when he stopped the car in front of a faint-red coloured vehicle. The paint was tarnished and there was a huge opening in the front, like an elongated window from where you could see what was being cooked. One man was tossing noodles in a gigantic kadhai while the other one was chopping vegetables. There was a jet black clay pot which I assumed was meant for soup. Amidst my passive observation, the server knocked on our car window and dropped in a menu. After a few minutes, we ordered chilli garlic noodles and momos. That’s how I started calling this place the Chinese van. 

Little did I know that it would become such a booming business today. Known as food trucks, the concept of these food ventures, was to provide quick and easy food to the customers, while dining conveniently within their private cars. The stationary van-like vehicle would have compartments to resemble a kitchen along with electricity connections and the other equipments. This novel food concept has gained a lot of popularity, so much so, that you’ll find several food trucks if you take a drive around the city.
