In the Malwa region of Madhya Pradesh, which is located in and around Ujjain and Indore, the lightly fried variant is a staple morning food. Depending on the amount of water added, it can be reconstituted with hot water to create a paste or porridge. Flattened rice is also consumed raw in villages, particularly in Chhattisgarh. Sev

Sev is a common Indian snack that is made out of tiny, crispy noodles prepared from chickpea flour paste that is then deep-fried in oil and seasoned with turmeric, cayenne, and ajwain. Indori poha is a dish which is known for the sev as its garnishing. After the poha is cooked, it is garnished with a lot of sev and coriander leaves.
