Method:

  • In a microwave-safe mug, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • Add the milk and olive oil to the mug and stir until well combined and you have a smooth batter.

Mug Upma

Ingredients:

  • ½  cup semolina (rava/sooji)
  • ¼  cup finely chopped vegetables (carrots, peas, bell peppers, etc.)
  • 1 small onion, finely chopped
  • 1 green chilli, finely chopped (optional)
  • 1 tablespoon oil
  • ½  teaspoon mustard seeds
  • ½  teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • ¼  teaspoon turmeric powder
  • 1 cup water
  • Salt to taste
  • Fresh coriander leaves for garnishing

Method:

  • Heat oil in a microwave-safe mug or a microwave-safe bowl for about 30 seconds on high power.
  • Add mustard seeds and cumin seeds to the hot oil and microwave for another 30 seconds until the seeds splutter.
  • Add the chopped onion, green chilli (if using), and asafoetida to the mug. Microwave for 1 minute or until the onion becomes translucent.
  • In the meantime, dry roast the semolina in a separate microwave-safe plate for about 2 minutes or until it turns slightly golden and releases a nutty aroma. Keep stirring every 30 seconds to avoid burning.
  • Add the roasted semolina, chopped vegetables, turmeric powder, salt, and water to the mug. Stir well to combine.
  • Microwave the mug for 2 minutes on high power.
  • Carefully remove the mug from the microwave (use oven mitts as it will be hot) and give it a good stir.
  • Microwave for another 2 minutes on high power. Stir again.
  • Microwave for a final 2 minutes or until the upma is cooked through and the liquid has evaporated.
  • Garnish with fresh coriander leaves and let it rest for a minute before serving.

Moong Dhokla

Ingredients:

  • ½  cup gram flour (besan)
  • ½  teaspoon ginger-green chilli paste
  • ½  teaspoon Eno fruit salt
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon sesame seeds
  • A pinch of asafoetida (hing)
  • 8-10 curry leaves
  • Salt to taste
  • 1 tablespoon chopped coriander leaves
  • 1 tablespoon grated coconut (optional)
  • 1 tablespoon lemon juice
  • Water, as needed

Method:

  • In a microwave-safe mug or bowl, add gram flour, ginger-green chilli paste, salt, and water. Mix well to form a smooth batter with pouring consistency.
  • Heat the mug in the microwave for 2 minutes on high power. Check the consistency of the batter; if it appears too thick, add a little more water and mix well.
  • Stir the Eno fruit salt into the batter and mix gently. You will notice the batter becoming frothy.
  • Quickly place the mug back in the microwave and cook for another 2 minutes on high power.
  • While the dhokla is cooking, prepare the tempering. Heat oil in a small tempering pan or microwave-safe bowl. Add mustard seeds and allow them to splutter. Then, add sesame seeds, asafoetida, and curry leaves. Microwave for about 1 minute until the curry leaves turn crisp.
  • Once the dhokla is cooked, remove it from the microwave and allow it to cool for a minute.
  • Pour the prepared tempering over the dhokla, ensuring it is evenly distributed.

  •  ½  cup instant oats
  • 1 cup water
  • ¼  cup chopped vegetables (such as carrots, peas, bell peppers)
  • ½  teaspoon oil or ghee
  • ¼  teaspoon mustard seeds
  • ¼  teaspoon cumin seeds
  • ¼  teaspoon turmeric powder
  • ¼  teaspoon red chilli powder (adjust to taste)
  • ¼  teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Method:

  • In a microwave-safe mug, add instant oats, water, and a pinch of salt. Stir well to combine.
  • Microwave the mug on high power for 2 minutes, then remove and stir.
  • Return the mug to the microwave and cook for an additional 1-2 minutes until the oats are cooked and creamy. Cooking time may vary depending on your microwave, so keep an eye on it.
  • While the oats are cooking, heat oil or ghee in a small pan over medium heat.
  • Add mustard seeds and cumin seeds to the hot oil. Let them splutter for a few seconds.
