  • 1 cup plain yoghurt
  • 2 medium-sized onions, thinly sliced
  • 4 tomatoes, chopped
  • 4 green chillies, slit
  • 4 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon turmeric powder
  • 2 teaspoons red chilli powder
  • 1 tablespoon biryani masala powder
  • 1 teaspoon garam masala powder
  • Fresh coriander leaves, chopped
  • Fresh mint leaves, chopped
  • 1/2 cup cooking oil or ghee
  • Salt to taste

Method:

Step 1: Preparing the Rice

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes.
  2. In a large pot, bring 4 cups of water to a boil. Add the soaked rice, cinnamon stick, cardamom pods, cloves, bay leaves, and salt.
  3. Cook the rice until it is 70-80% cooked (slightly firm in the centre). Drain the rice and set it aside.

Step 2: Preparing the Biryani Masala

  1. In a deep pan or Dutch oven, heat the cooking oil or ghee over medium heat.
  2. Add the sliced onions and sauté until they turn golden brown.
  3. Add the minced garlic and grated ginger, and cook for another minute.
  4. Add the chopped tomatoes and cook until they become soft and mushy.
  5. Add the turmeric powder, red chilli powder, biryani masala powder, and salt. Mix well and cook for a few minutes until the spices are well combined.
  6. Add the chicken or meat pieces (or vegetables) to the masala and cook until they are sealed and partially cooked.
  7. Stir in the plain yoghurt, green chillies, and half of the chopped coriander and mint leaves. Mix well and let it simmer for 10-15 minutes until the meat is tender and cooked through. If using vegetables, ensure they are cooked but still retain their firmness.

Step 3: Layering and Dum Cooking

  1. Preheat the oven to 180°C (350°F).
  2. Take a large oven-safe dish with a tight-fitting lid. Grease the bottom of the dish with ghee or oil.
  3. Spread half of the cooked rice evenly over the bottom of the dish.
  4. Layer the cooked meat or vegetable masala over the rice.
  5. Spread the remaining rice over the masala, forming another layer.
  6. Garnish with the remaining chopped coriander and mint leaves.
  7. Cover the dish tightly with aluminium foil or the lid, ensuring no steam escapes.
  8. Place the biryani dish in the preheated oven and cook for 25-30 minutes.
  9. Remove from the oven and let it rest for 10 minutes before removing the lid or foil.
  10. Gently fluff the rice layers with a fork, being careful not to break them.
