No matter where you go in Rajasthan, you can find delicious local food in every part of the state. From the staple of Dal Bhatti Churma to a rich bowl of Laal Maas. Regardless of your dietary preference, there is something for you to enjoy. One of the best ways to sample any region’s food across India is to find yourself in a thali restaurant. Many Rajasthani thalis are centered around Dal Bhatti, which is a combination of a hard bread made with coarse wheat and laced with ghee, served with dal and a variety of accompaniments like buttermilk. You may also find an assortment of other vegetarian dishes such as Ghatte ki Sabzi, which is similar to a Sindhi kadhi and consists of gram flour dumplings cooked in a yoghurt based curry. Stepping aside from the thali and into the realm of street food, Kachoris are the state-wide favorite, with many decades-old establishments serving up the fried treat for tourists and locals alike.
