Roasted Beetroot, Feta & Arugula Salad

Ingredients [For Dressing]

  • 1 passion fruit, pulp extracted
  • Salt and pepper, to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 2 tablespoons olive oil
  • ½ cup brown sugar
  • Handful of walnuts

Ingredients [For Salad]

  • Fresh rocket lettuce
  • Roasted beetroot, sliced
  • Fresh orange segments
  • Feta cheese, crumbled
  • Balsamic reduction

Method

  • In a jar, combine the passion fruit pulp, salt, pepper, lemon juice, honey and olive oil. Secure the lid tightly and shake vigorously until well combined. Adjust salt to taste.
  • In a pan over low heat, melt the brown sugar until it caramelises. Add the walnuts and stir gently until evenly-coated. Remove from heat and set aside to cool.
  • In a serving bowl, arrange the fresh rocket lettuce, roasted beetroot slices and fresh orange before sprinkling crumbled feta cheese over the salad.
  • Drizzle a few drops of balsamic reduction for a touch of acidity and depth of flavour. Finally, scatter the caramelized walnuts on top to add a delightful crunch.
  • Just before serving, generously drizzle the prepared passion fruit dressing over the salad, ensuring each bite is infused with its tangy sweetness.

Method

  • Transfer the cooked quinoa grains into a large salad bowl. Season with a pinch of salt and pepper, ensuring the grains are evenly seasoned. If desired, use a mould to shape the grains for an elegant presentation.
  • Arrange fresh lettuce leaves on a serving plate. Scatter julienned bell peppers over the lettuce bed, adding a pop of colour and crunch to the salad.
  • Carefully demould the seasoned grains onto the same serving plate, placing them next to the side salad. Drizzle a generous amount of the prepared balsamic dressing over the grains, ensuring they are evenly coated with flavour.
  • Sprinkle crumbled feta cheese over the salad for a creamy and tangy finish. Serve immediately, allowing your guests to savour the delightful combination of flavours and textures.
